A Señor Moment

    • 2 Chicken Breasts
    • 1 Chorizo Casero 225g
    • Tomato Passata 600g
    • 1 Large Brown Onion
    • 1 Large Red Onion
    • 2 Chillies (any colour)
    • 1 Handful of Fresh Basil
    • 8 Cloves of Garlic
    • 2 Sweet Pointed Peppers
    • Extra Virgin Olive Oil
    • Mexican Beans 400g
    • Hot Paprika
    • Cayenne Hot Pepper
    • Salt
    • Black Pepper
    • Parmesan Cheese
    • 1 Bottle of Red Wine

Method:

  1. Dice the chicken breast and heat in a frying pan until cooked through.
  2. Take the onions, chillies, basil, garlic and chop finely. Then slice the peppers and chorizo. Place in a large frying pan, add the chicken, drizzle a small amount of the olive oil and cook on a medium heat; stirring regularly. 

3. Now season with plenty of the paprika and cayenne pepper (keep tasting and add more depending on how much spice you want). Add a small amount of the black pepper and a pinch of salt if desired.

4. Drain the Mexican beans through a sieve and add them into the pan. Once all the ingredients have softened, add around 400g of the passata and keep stirring. Add even more passata for a milder dish. Keep cooking on a medium heat until the whole sauce is ready to serve.

5. Add a dusting of parmesan, drink any remaining wine and enjoy!
