A Señor Moment

- 2 Chicken Breasts
- 1 Chorizo Casero 225g
- Tomato Passata 600g
- 1 Large Brown Onion
- 1 Large Red Onion
- 2 Chillies (any colour)
- 1 Handful of Fresh Basil
- 8 Cloves of Garlic
- 2 Sweet Pointed Peppers
- Extra Virgin Olive Oil
- Mexican Beans 400g
- Hot Paprika
- Cayenne Hot Pepper
- Salt
- Black Pepper
- Parmesan Cheese
- 1 Bottle of Red Wine
Method:
- Dice the chicken breast and heat in a frying pan until cooked through.
- Take the onions, chillies, basil, garlic and chop finely. Then slice the peppers and chorizo. Place in a large frying pan, add the chicken, drizzle a small amount of the olive oil and cook on a medium heat; stirring regularly.
3. Now season with plenty of the paprika and cayenne pepper (keep tasting and add more depending on how much spice you want). Add a small amount of the black pepper and a pinch of salt if desired.
4. Drain the Mexican beans through a sieve and add them into the pan. Once all the ingredients have softened, add around 400g of the passata and keep stirring. Add even more passata for a milder dish. Keep cooking on a medium heat until the whole sauce is ready to serve.
5. Add a dusting of parmesan, drink any remaining wine and enjoy!
